What is Black Tea?

Black tea comes from the same plant as White tea, Green tea and Oolong. It just goes through a different process after the leaves are plucked. For black tea, the leaves are left to wilt in a dry environment, before being cut, torn and crushed to make the leaves very fine. Next, they are left to fully oxidise (or ferment), which gives them their distinctive brown colour. The strong flavour of black tea comes from changes to the chemical make-up of the leaves during this process. This is also the time when the leaves become caffeinated, meaning Black Tea has the strongest caffeine content of the pure teas.
